Super moist zucchini bread made with chopped walnuts, cacao chunks, cinnamon, nutmeg, and FTM SUNFLOWER OIL.
When people think of zucchini bread, they usually think “oh dear God, not that dry and bland stuff” but not our zucchini bread. Our bread is incredibly moist, nutty, and the cacao chips will literally melt in your mouth. An added plus, our recipe is very quick and easy to make. It takes only 5 minutes of preparation time and an hour in the oven. You can serve it fresh at most any temperature or it lasts up to 6 months in the freezer. This is the zucchini bread that you’ll want a second piece of.

INGREDIENTS
Flat Bread Crust
- 2 cups almond flour
- 1⁄2 tsp baking soda
- 1 tsp ginger
- 1⁄2 tsp nutmeg
- 1 tbsp cinnamon
- pinch of salt
- 2eggs
- 1⁄2 cup honey
- 2 tbsp FTM SUNFLOWER OIL
- 2 cups of grated zucchini well packed (should be approx. 2 zucchinis)
- 1⁄2 cup walnuts chopped
- 1⁄2 cup cacao chips
STEPS
- Set the oven to 350o
- Line a 9 x 5-inch tin loaf pan with parchment paper, this will make removing it after
baking much easier - In a mixing bowl combine the almond flour, baking soda, salt and spices
- Once well combined, add in the eggs, honey and FTM SUNFLOWER OIL and mix
- Finally stir in the chopped walnuts, the cacao chips, and shredded zucchini
- Pour the batter into the loaf tin and put in the oven for 45 minutes. Cover the bread with
tin foil to ensure that it doesn’t brown too quickly on top - The bread is done when a toothpick inserted in the middle comes out clean
- Allow to cool slightly before removing from the pan and slicing
We like to eat this bread warm with a spread of Ghee, or even better, dipped in our FTM EVOO. We’ve also been known to serve this bread for desert at home or bring it to a dinner party as a healthy desert alternative and serve it warm, with vanilla coconut ice cream.
We suggest slicing up the walnut bread before freezing it… then you can easily pop a piece or two into the toaster for breakfast or as a mid-afternoon snack.
