Salmon on fennel with mandarins and asparagus

Salmon on fennel with mandarins and asparagus

Salmon on fennel with mandarins and asparagus

Icelandic salmon cooked with fennel, shallots, ginger, and mandarin oranges and served with a side of asparagus.
First off, let us start by saying that salmon and fennel is a harmonious combination. Then, once you add the mandarin oranges infused with the ginger… It’s nothing short of bliss.
Fennel and ginger are staples when aiding in good digestion. We love salmon for many reasons including health, and because it’s one of the tastiest types of fish out there. Salmon, if cooked correctly, can turn most any dish into a gourmet meal.
Now for the mandarin oranges, as they add that perfect delicate and sweet balance to the other savory and zingy ingredients.

This dish is so healthy, delightful and well balanced, you’re sure to be pleased.
