Turkey Corn Chili

Turkey chili made with Free Range organic ground turkey, organic corn, red and yellow peppers, onions, crushed tomatoes, black beans, and canola oil.
This “lean & clean” Turkey Chili is an all-time favorite recipe for a few reasons. First of all, it’s really easy to prepare. The fresh ingredients are straight-forward and uncomplicated. Secondly, the prep and cook time takes about 35-45 minutes depending on how efficient you are in the kitchen. Thirdly, it’s high in protein and low in carbs and fat, which makes this dish a heart- healthy and fit-for-life meal. Finally, and most importantly, it’s so darn good… you’ll for sure want seconds … and left overs.

This Turkey Corn Chili is Gluten Free, High Protein, and Low Fat.

INGREDIENTS

  • FTM CANOLA OIL
  • 1 medium onion
  • 1 large yellow bell pepper 1 large red bell pepper
  • 1 jalapeno pepper
  • 1 Bunch of scallions
  • 1 dried bay leaf
  • 1 tbs. dried chili powder 1 tbs. course sea salt
  • 1 tbs. ground cumin
  • 1 tsp. cayenne pepper
  • 2 bags frozen corn kernels
  • 1 (32-ounce) can chunky-style crushed tomatoes
  • 1 large box chicken bone broth
  • 3⁄4 pound light meat and 3⁄4 pound dark meat organic ground turkey (from butcher is best but pre-packaged is ok too)
  • 1 goat cheddar, shaved
  • 2 scallions, white and greens, chopped

STEPS

  • Heat a deep pot over medium high heat. Work close to the stove for your chopping Add oil to your pot, 1 turn of the pan
  • Add 2 cups prepared chicken stock or bone broth
  • 1 (32-ounce) can, chunky style crushed tomatoes
  • Add vegetables as you chop them
  • Add bay leaf and cook vegetables 5 minutes, stirring frequently, reducing heat if veggies start to stick
  • Stir in diced turkey meat and season with chili powder, cumin, and cayenne sauce, and season with a little salt, to taste
  • Add corn at the very end
  • Combine your chili well, adjust seasonings to taste
  • Reduce heat to medium low, and simmer on low for 20 minutes
  • Garnish chili with chopped scallions and the shredded cheese

The amount on the recipe serves 4 people, and indeed plentiful however, if you’re serving additional guests, or would like leftovers … (and maybe some to freeze), we suggest you double the number of ingredients’… and use a bigger pot *wink.
Some people like to serve their chili with tortilla chips… but what’s even healthier and more delicious, is to serve the chili with homemade, gluten-free, South West corn bread made with our FTM EVOO and with “spicy-icy” skinny margaritas.
